Roasted Pork Tenderloin with Apples & Sweet Potatoes


Tonight I made another winning recipe! I started off looking at this recipe which I came across over at fANNEtastic Food the other day. She was talking about how her friend make this recipe and substituted apples for rhubarb. I thought it sounded like a great idea. So, using that as my base, here's what I came up with:

I decided  that #1) I didn't want to make a chutney and #2) I wanted to add sweet potatoes.

I started with the side dish:


 I diced up a sweet potato (leave the skin on!) and added a couple cloves of garlic and some red onion:


Then I added some grated fresh ginger(*hint- I store mine in a ziploc bag in the freezer) and some clementine zest (orange zest would also work):



 I drizzled it all with olive oil, seasoned with black and red  pepper, and stirred to combine:



 I roasted the mixture in the oven at 400 degrees for 10 minutes. Then I diced up and added an apple (*I added it later so it wouldn't get as mushy):


 I roasted it for another  10-15 minutes, then put it in a bowl, covered it and set it aside:


 
While all that was roasting, I seasoned and seared the pork tenderloin. I used McCormicks, black pepper, red pepper and paprika:




 Out came the sweet potato mixture, in went the tenderloin. I roasted it at 400 degrees until it reached 160 degrees (about 30 min?) While I waited, I snacked on some pepperjack cheese  and  triscuits.

To go with the pork, I made some green beans, which I ate all of before we sat down for dinner...and a salad. Last night the hubby and I exchanged one gift, and he got me this AWESOME salad dressing bottle so I can start making my own salad dressings! It even has recipes right on the bottle. You just pump it up and down to mix up the dressing! The hubby mixed us up some balsamic vinaigrette while I made the salad:







When the pork was done, I plated it up and dinner was served!





The result? The flavor was great! The tenderloin was juicy and I really liked the sweet potato and apple mixture. I'll definitely make it again.

Personally, I think sweet potatoes are ALWAYS called for. No matter what dinner you're making. This roast pork sounds delicious!

My roommate has that salad dressing mixer and it's a big hit over here!
