Black Bean Stuffed Peppers

Hi Friends-

Tonight was Mexican night at our house. I was making some chicken tacos and decided to try these Black Bean Stuffed Peppers as a side dish.


Super simple...here's what you do:

Start out with any kind of pepper you like. I found these fun-looking, long and skinny ones at the grocery store last weekend.

 
Cut a slit down the middle and roast at 425 for 15 minutes, or until the skin starts to blister

 
 
While the peppers are roasting, saute some chopped onion and garlic in a pan with some black beans. Season with cumin and chili powder.


Add some corn and heat through.


Then stir in some cheese:


 Stuff the peppers with the bean mixture.


Top with a little extra cheese and put them back into the oven for another 5 minutes. Serve with tacos!

Some homemade peanut butter cracker sandwiches. Just as good as the kind you buy in the store!


 And a slightly less pretty version of last night's salad! Ok, so really it was missing about 1/2 the ingredients...but it was still delicious!
