Simple Spaghetti Squash
I'm sure you've seen these in the grocery store this time of year...but have you ever bought one? Have you ever cooked one? Are you aware of what a cool vegetable they are?!
What's that? You don't know how to cook one? Well let me just tell you! Then you'll have no excuse!
First of all...unless you're feeding a small army, choose a smallish squash. There's lots of stuff in there, more than you would think!
Purchase your squash, bring it home and set your oven to 350. Stab your squash a few times with a knife, place it on a pan and into the oven it goes! After 45 minutes or so, open the oven and stab the squash again with a knife. If the knife pierces easily, it's done. Take it out, let it cool slightly and then cut it in half.
Scoop out the seeds and top layer of stringy stuff with a spoon.
Then, use a fork to pull the squash away from the sides....see the little strings?! Looks just like spaghetti!!! Scoop them into a bowl.
This isn't the most flavorful squash, so I usually add a LITTLE (keyword here...this is a vegetable and you don't want to derail all of the health benefits) butter. I use about 1/2 a Tbsp. I also happened to be roasting some garlic (for another recipe that I will share with you later, so I added some of that too. Mix it all around and top with a little Parmesan cheese.
Enjoy by itself, or with some spaghetti sauce on top...or with a little balsamic vinegar!

LOVE spaghetti squash! I do it up in the microwave (most of the time) and top it with a little marinara. Great comforting meal. I can't believe HOW much it tastes like spaghetti
We love it too! I bake it just like you, and top it with home made marinara, or just a little EVOO and parsley and parmesan. Leftovers make great side dishes also. :)
yesss....i love leftovers!!! and Erica, I'll have to try it in the microwave next time...probably during the week when I have way less time!
