Chicken Wraps


Tonight's dinner was quick, easy AND healthy...my favorite kind :)

I had a couple of chicken breasts defrosting in the fridge, and a bunch of spinach I needed to use up. First, I cooked up the chicken with some garlic, green pepper slices, red pepper, black pepper and paprika:




When the chicken was ready, I warmed up two tortillas and spread one with guacamole for the hubby and one with sweet potato hummus for me (have you tried it yet? I seriously can't get enough of the stuff).




Then I added the chicken and peppers and topped with veggies:





Lastly, pile on the spinach, slice and serve!
