Broccoli & Mushroom Turkey Burgers
Now that we've munched our way through dessert and snack, we should probably cover dinner don't you think???
On the menu tonight was Broccoli & Mushroom Turkey Burgers...I was inspired by this recipe from The Ungourmet, which involved broccoli, bacon and cheddar cheese. I made some adjustments because I didn't have any cheddar cheese and I thought bits of crunchy bacon IN the burger would be weird. Here's what I came up with:
Start by trimming off a few trees of broccoli and dicing them up SUPER small.
Put them in a bowl with a little bit of water and microwave them for 1-2 minutes. Meanwhile, put 1 lb lean ground turkey in a bowl with some diced onion, red pepper, black pepper, Worcestershire sauce and McCormicks seasoning.
Add the broccoli, some chopped mushrooms, some breadcrumbs, an egg and a couple diced cloves of garlic:
Get your hands in there and mix everything around really well. Then form into patties of your desired size. I made 8.
Cook in a hot pan with a little bit of olive oil until 165 degrees. I topped mine with 1/2 a slice of pepperjack cheese, a slice of tomato and a little bit of homemade guacamole:
For a side, I sauteed some swiss chard with a little garlic and some balsamic vinegar:
This was an experiment...and the results were good. The hubby does not like the new McCormicks salt-free seasoning, so I would leave that out next time...but you can't even tell the broccoli is in there unless you're looking at it. The hubby thought it was green pepper at first. It's a great way to add some extra veggies to the meal!
