Sweet Potato Crusted Cod


 Hi Friends!

After last night's random dinner of another curried sweet potato and some peanut butter toast, I decided to do some cooking tonight. 




Dinner was inspired by this recipe but I changed it up a bit. I seem to be on a sweet potato kick this week :)



This is an easy one. Here's what you do:

Turn this:



into this (shredded sweet potato and a little Parmesan cheese)


Create this (flour with black and red pepper)


Set up your stations:


Dredge, dip, coat and add to hot pan:

 
Cook on both sides until browned on the outside and the fish is cooked through:

Overall, a simple and satisfying meal. I might try baking the fish next time to see what happens.

What a great idea! The fish looks cooked perfectly too. I've never thought of potato crusting something- brilliant!

give it a try! it's a little hard to get the potatoes to stick so press them on there really good!!

the ones that got the brown color were nice and crisp...some of the ones on the side just kind of absorbed the olive oil that i had in the pan which i didn't really like...that's why I thought about baking it next time...or using less oil. use a hot pan! i cooked mine for about 10 minutes i'd say. i think i overcook things sometimes but i'd rather it be overcooked than under :)
