PBBAG Sandwich
So today I tried the sandwich (inspired by Julie's post )for lunch! I used my new apple corer...and it was AWESOME!
To begin, core the apple:
Slice into rings:
To make two sandwiches, select four rings of comparable size and top two with peanut butter and granola:
Add banana slices and top with the other apple slices:
YUM!!!!!!!
Add some pepitos and you've got yourself a lunch!
***Side note about the granola:
You may remember my original granola recipe, found here. Today I tried a modification. I left out all the brown sugar, heated 1/4 c of honey, 1/4 c almond butter and 1 Tbsp butter over low heat until the butter melted. I left all the dry ingredients the same and mixed them with the heated mixture and 1/4 c applesauce. Then I baked it for 20 minutes. The result? Not bad. Definitely not as sweet and I think the applesauce got soaked up by the oats and made them more chewy than crunchy. I put the granola back in the oven for 20 more minutes. That helped it crisp up a little bit, but it's still not as crunchy as before. Since it's not as sweet, it's better for this version to be mixed in to other things that already have some sweetness- like the pb and bananas or yogurt or something....Bottom line: still working to perfect a lower-sugar, crunchier version of the granola.
