Sweet Potato Hummus


Let's talk about hummus for a minute. Good stuff right? It's healthy, it makes a great snack and I know I should eat a lot of it...but it seems to me that there is a lot of variance between brands. And sometimes, try as I might, I just don't like it. I've made it at home several times with pretty successful results....but I wanted to change it up a little. I've had this recipe bookmarked for a while now and while I was at the grocery store on Friday, I saw this:


Whaaaaaaaaaaat?!?! That's crazy cheap. Needless to say, I bought 5.5 lbs of sweet potatoes and only spent $1.37!! That's about 10 large sweet potatoes. I decided that made this a perfect time to try out this hummus. I'm also thinking about trying out these whole wheat sweet potato muffins!

Anyways, although Cozy Kitchen's recipe inspired me, I didn't follow it exactly. Here's what I did:

I peeled and diced a sweet potato, put in a saucepan with an inch or so of water and boiled it for a few minutes until tender.


Then I put the sweet potato in my mini food processor with about 3/4 can of chickpeas. I added 2 Tbsp olive oil, a pinch of salt, 1 Tbsp tahini, one clove of garlic and the juice of one lemon. Then I add water as needed to help it blend. I probably added about 1/4 cup.



It looks kinda like cheese whiz...but it tastes great! You can really taste the sweet potato but it doesn't lose all of the hummus qualities!


This could also be done with canellini beans instead of chickpeas or butternut squash instead of sweet potato.
